2 cups white beans, dried
1 1/2 qt water
1 tsp salt
1/3 cup brown sugar
1 tsp dry mustard
1/4 cup molasses
1/4 lb salt pork, sliced
1 large onion, diced
Place beans in water and soak overnight.
Add salt and cook 1 hour or until tender. Drain liquid into a separate pan. Add other ingredients and 2 cups of drained liquid to beans. Cover and bake 4-5 hours. Check occasionally, adding small amount of water if needed. Serves 8.
Bake: 6 or 7 coals underneath - 15 - 18 on top, otherwise 2 thirds on bottom 1 third on top.
