Floor:
200 grams flour
75 grams sugar
1 egg
100 grams butter
7 grams baking powder
Mix. Place on bottom of springform pan
Cake:
1 ½ to 2 pounds small curd cottage cheese
Juice & grated rind of 1 lemon
1/8 pound potato starch
3 eggs (separated)
5 grams baking powder
½ liter milk
200 grams sugar
1 vanilla pudding
5 grams = 1 teaspoon
Mixing pudding, ½ liter milk & 200 grams sugar. Cook. Set aside.
Mix lightly drained cottage cheese with lemon juice and grated rind and 1/8 pound potato starch.
Add 3 ½ grams baking powder, and 3 egg yolks. Add cooled pudding. Beat egg white until they peak easily. Fold into mixture. Pour mixture over floor above.
Bake 2 hours at 325-350℉. Will rise very high, then fall as it cools.
Grease spring form, place brown packing paper disk on bottom. Cut packing paper strips twice as high as spring form. Wrap around inside. This will support cake as it rises high.
