1 pound Navy Pea Beans, soaked overnight
1 Onion, between medium and large
1 Cup Brown Sugar
½ teaspoon Ginger
2 to 2 ½ tablespoons prepared mustard
Salt & pepper to taste
1/3 cup molasses
3-4 strips bacon, raw and chopped, OR about 1/8 pound of salt pork
In the morning, cover and boil beans in plain water. Skim off foam. Boil until soft (not mushy). Keep water just covering beans. When soft, add rest of ingredients. Let simmer until done. Stir up from the bottom quite often.
