4 pounds chicken
6 sprigs of thyme
SPICE MIXTURE
2 tsp salt
2 tsp paprika
1 tsp pepper
½ tsp onion powder
½ tsp granulated garlic
Mix to incorporate spices
Season chicken on all sides. Place cast iron pan in cold oven. Heat oven to 450 degrees
In hot cast iron; add 2 tbls unsalted butter, add 6 sprigs of thyme. Add chicken, skin side down and pop into 450 degrees oven for 15 minutes
Turn chicken over, then put back in oven for 15 more minutes or until legs and thighs read 175 and breast read 160. Let rest in skillet for 10 minutes
Remove chicken and discard thyme sprigs. Whisk pan drippings, spoon over chicken
